Samosas are triangular shaped wraps, each with its own individual filling. They originated in India. During the construction of the Mombasa-Kampala railroad by the British, many worker from India went to Kenya to work on the railroad project and took their samosas with them. The samosas were introduced to the Kenyans. They found that samosas were basically filled with a mixture of potatoes, peas and strong curry, or some other vegetables with curry. They eagerly adopted samosas as their own but said where is the beef? So, they decided to modify them according to their own taste and available Kenyan ingredients. Since they were avid meat eaters, they came up with beef and chicken fillings. Over time more modifications were made but unique to African tastes, and they soon realized almost anything could go into their samosas. With this in mind, Kenyans who migrated to the U.S. decided to experiment with other fillings using whatever local ingredients were available to fit the local tastes. As a result, Safari Samosas, LLC has developed ten different fillings, each with its own special combination of ingredients and spices. Our fillings include beef, chorizo & egg, spicy or mild chicken, veggie, mushroom, kale & spinach, mung bean, and traditional Indian curry potato. For a sweet treat, we also have an apple/peach samosa!
Priscillah Finney, owner, is a native of Kenya who came to t he U.S. in 1995. She acquired citizenship in 2009. Since arriving to the U.S., Priscillah provided samosas to church groups, friend, relatives and neighbors. At their urging, she decided to develop a Samosa business.
